Growing Instructions
- Direct sow in spring as soon as the soil can be worked; beets tolerate cool weather but not heavy frost.
- Sow about 1/2-1 inch deep in loose, well-drained, rich soil in full sun.
- Seeds generally germinate in 7-14 days at soil temperatures of about 55-75°F.
- Thin seedlings to 3-4 inches apart in rows 12-18 inches apart when they are a few inches tall.
- Water regularly; letting the soil dry out can make roots woody or misshapen.
- Roots are generally ready about 90-100 days after sowing.
- Harvest when roots are between golf-ball and tennis-ball size; smaller roots are the most tender, and greens can be picked along the way.
