Red Tatsoi (Brassica rapa) is a cool-season Asian leafy green that forms a low, flat rosette of dark, spoon-shaped leaves with reddish tones. Also called spoon mustard, it has a mild, mustard-like flavor that suits salads, stir-fries, and soups. It grows fast and stands up well to frost. This packet contains 20 seeds.

Growing Instructions
- When to Plant: Direct sow in spring for an early crop, or in late summer for fall harvest. It prefers cool weather at 50-70°F (10-21°C).
- Soil: Rich, well-draining soil amended with compost.
- Sunlight: Full sun to partial shade; afternoon shade in warm weather helps delay bolting.
- Watering: Water regularly to keep soil consistently moist.
- Spacing: Sow 1/4 inch deep and thin to 6-12 inches apart.
- Germination: Germination takes 8-12 days at 45-80°F (7-27°C).
- Harvest: Pick baby leaves from about 25 days after sowing, or harvest whole rosettes at 45-50 days. Tatsoi tolerates cold down to about 15°F (-10°C) and can be harvested from under light snow.
- Tips: Cut individual outer leaves for a cut-and-come-again harvest. Keep the bed evenly moist and watch for flea beetles on young seedlings.
