Rainbow Cauliflower (Brassica oleracea var. botrytis) is a cool-season annual vegetable grown for heads in a rainbow of colors — purple, orange, green and white curds that brighten the garden and the plate. The colored heads are used just like classic cauliflower: steamed, roasted, or eaten raw. A fun, eye-catching crop for spring and fall gardens.

Seed Information

  • Type: Vegetable Seeds
  • Common Name: Rainbow Cauliflower
  • Botanical Name: Brassica oleracea var. botrytis
  • Life Cycle: Annual
  • Sunlight: Full sun (6–8 hours daily)
  • Watering: Consistent and plentiful; mulch to protect shallow roots
  • Growth Habit: Compact plants 18–24 inches tall
  • Soil Type: Rich, well-drained soil; pH 6.5–6.8
  • Planting Time: Start indoors for spring or late summer for fall crops
  • Days to Maturity: 55–90 days from transplant

Growing Instructions

  • When to Plant: Start indoors 4–6 weeks before transplanting; set out about 2 weeks before the last frost, or in late summer for a fall harvest
  • Soil: Rich, fertile soil; mix in compost or organic matter before planting
  • Sunlight: Full sun
  • Watering: Keep consistently moist; any interruption in growth can cause small “button” heads
  • Spacing: Space 18–24 inches apart in rows 24–36 inches apart; sow ¼–½ inch deep
  • Germination: 7–14 days at 45–85°F (7–29°C)
  • Harvest: Cut heads when curds are firm and 6–8 inches across, before they start to loosen; harvest promptly in warm weather
  • Tips: Colored types generally do not need blanching; avoid stressed, root-bound transplants — they may never form good heads
