Molokhia (Corchorus olitorius), also called Egyptian spinach or jute mallow, is a heat-loving annual leafy green grown for its tender, mild-flavored leaves. It is the star of the traditional Egyptian soup that shares its name, and it thrives in hot summers when cool-season greens struggle.

- Days to Maturity: 45–70 days to first harvest
Growing Instructions
- When to Plant: Direct sow or start indoors after all danger of frost has passed, in warm soil.
- Soil: Fertile, well-draining soil.
- Sunlight: Full sun, 6–8 hours daily.
- Watering: Keep soil consistently moist but not waterlogged.
- Spacing: Sow 1/4 in deep. Thin to 10–12 in apart.
- Germination: 5–14 days at 75°F (24°C) or warmer.
- Harvest: Begin picking tender leaves and upper stems when plants reach 12–18 in tall. Regular trimming encourages branching and continuous leafy regrowth.
- Tips: Pinch the growing tips early for bushier plants with more leaves. Cooked leaves develop a slightly thickened, silky texture that is traditional in soups and stews.
