Early White Vienna Kohlrabi (Brassica oleracea var. gongylodes) is a fast cool-season vegetable grown for its crisp, pale-green bulbous stem. The tender flesh tastes mildly sweet, like a broccoli stem — excellent sliced raw, shredded into slaw, or roasted; the leaves cook like kale.

Growing Instructions
- When to Plant: Direct sow in early spring, or start indoors 4–6 weeks before the last frost. For fall crops, sow 6–8 weeks before the first frost.
- Soil: Deep, rich, well-draining soil; amend with compost before planting.
- Sunlight: Full sun to partial shade.
- Watering: Keep soil consistently moist — steady water keeps bulbs tender and sweet.
- Spacing: Sow 1/4–1/2 in deep, 1 in apart in rows 18 in apart. Thin to 6 in apart.
- Germination: 5–10 days at 50–65°F (10–18°C).
- Harvest: Cut bulbs at ground level when 2–3 in in diameter. Harvest young — larger bulbs turn woody.
- Tips: Cool weather gives the best quality; summer heat can make bulbs tough and dry. Sow every 2–3 weeks for a continuous supply.
