  • Planting Time: Sow outdoors after the last frost, when soil is above 70°F (21°C)
  • Days to Maturity: 30–60 days to first harvest

Growing Instructions

  • When to Plant: Direct sow or start indoors after the last frost, when temperatures are reliably warm. Can be sown through summer.
  • Soil: Fertile, moisture-retentive soil enriched with compost. Also grows well in containers with a water tray.
  • Sunlight: Full sun; it needs plenty of sunshine to stay tender.
  • Watering: Keep the soil wet at all times — never let it dry out. Growth slows below 50°F (10°C).
  • Spacing: Sow 1/4–1/2 in deep, 6–8 in apart.
  • Germination: 7–14 days. Soak seeds in warm water for 24 hours before sowing to improve sprouting.
  • Harvest: Begin cutting young shoots about 30 days after sowing, before plants flower. Snip stems and leave the lower portion to regrow for repeated harvests.
  • Tips: Do not release plants or trimmings into natural waterways, and check local regulations before planting — water spinach is restricted in some states.
