Anise (Pimpinella anisum) is an annual herb in the parsley family, grown for its sweet, licorice-flavored seeds and aromatic leaves. Both the leaves and seeds are used in cooking - leaves for teas, salads, and garnishes, and the dried seeds for baking, curries, and liqueurs. It forms airy umbels of small white flowers in summer. This packet contains 50 seeds.

  • Growth Habit: Bushy, 20-28 inches tall
  • Soil Type: Rich, well-draining soil
  • Planting Time: Direct sow in spring after the last frost, when soil is warm
  • Days to Maturity: 75 days for leaves; 100-120 days for seed

Growing Instructions

  • When to Plant: Direct sow outdoors in spring after all frost danger has passed, when soil reaches 65-70°F (18-21°C). A long, warm season is needed to ripen the seeds.
  • Soil: Rich, well-draining soil. Anise does well in drier soil once established.
  • Sunlight: Full sun.
  • Watering: Keep young plants evenly moist; established plants need only moderate watering.
  • Spacing: Sow 1/4 inch deep and thin to 8-12 inches apart in rows about 18 inches apart.
  • Germination: Germination takes 7-21 days at 65-75°F (18-24°C). Anise has a taproot and does not transplant well, so direct sow where it will grow.
  • Harvest: Pick leaves as needed through the season. For seed, let the flower heads dry on the plant until the seeds turn grayish-brown, then cut the heads and thresh out the seeds.
  • Tips: Keep the bed weed-free while plants are young. Do not confuse anise (Pimpinella anisum) with star anise - they are different plants with similar flavor.
